the flat iron steak was amazing, rubbed with alder smoked sea salt and a 5 pepper blend, cast iron almost smoking hot with peanut oil, 5 minutes on one side, heat off lid on, let it set 20 minutes, sliced across the grain...perfect medium rare and super tender....nom nom nom....

Well, that makes my Long John Silvers seem kinda crappy.
