What type of cut do you need?
Any large roast works. Leaner the better, though all venison is pretty lean. If you're having it processed, go ahead and have it sliced 1/8" across the grain.
Nice. Just for clarity, I make real jerky, not that weird **** that's ground and then squeezed through a caulking gun.
