If the rib is to long for the grate you can roll it in a circle, just overlap the end some and run a skewer through them.Tried ribs on the Kamado Joe.

The most important thing with baked/smoked taters is cook them until 210 degrees. At 350/375, this will only take about an hour. The complaint was they were way to smoky. I'd put them on along with whole chickens. We like baked taters on the smoker, but twice baked are even better.

Probably enough for the initial rub, but I'd run out when adding some to the finished product. I buy my Meat Church rubs the same way and I lay it on THICK....I hope 5lbs of seasoning is enough

The butcher shop we go to has one I really like, but 8oz is the biggest they have, would be pretty expensive to use that for a bigger cook

I remember now. You cooked a bunch up just a couple months ago.I can fit four 10# butts on my grill these are 17-20#’s each so I’m hoping I get do 2 at a time! We run a local youth league concessions and sell 6-8#’s a night of pulled pork!
