Chia seed has a sort of gelatinous quality when soaked with water. Could make a good substitute for eggs? It also makes a sort of wet pudding if you sweeten and flavor it.

I do have some powdered eggs in the pantry. They taste terrible. Years ago my dad tried them and he said they taste just as bad as the powdered eggs they would serve as back-up in the Navy. So I guess that's as good as they get.
