I've always explained the the proper method of grilling a good steak thusly: you fire up the charcoal (yes, charcoal) as hot as you can possibly get it, put the steak on a platter and walk past the grill slowly. Turn it over, walk back....and serve.
That sounds like it would work, but I'd worry about walking too close to the grill.
