I went to a small resale shop and ended up getting a nice Pietta 1858 Army replica in .44 cal. It's my first black powder pistol. I have BP rifles, so I have basic knowledge of how they work. Anything I should watch out for?

Good solid BP shooters, you will enjoy it. AS far as the conversion kits, they work, but are on the expensive side for what you are getting. You can almost get a Uberti conversion 1858 for the same money that shoots 45 Colt. It's the revolver on top, complete with cartridge case ejector and loading gate.
