I know most iron sights will work just fine out to 300 yards as long as I do my part to properly zero and hold them steady. Is there anything else I should be looking for in a sight set I want to take out to 5-600 yards or more?
How much adjustability is required?
My budget is $200 give or take, but I don't want to just slap some MBus Pros on there if there is something better I should be considering for longer range shooting.
The MBUS pros are really nice. If you want to have a bit more accuracy at ranges past 300 you could go for the USGI MATech rear site that has graduation for those ranges. I think it would work fine with the MBUS pro front, but could also be paired with just about any quality front flip with adjustable elevation sight post.

I have a set of Yankee Hill sights (front is flip). they seem sturdy and accurate. Maybe pickup a smaller front sight post for longer distances? ymmv
