Sometimes I do but didn't feel like running to store just for that. Onion and pepper were picked from the garden just prior to cooking. Was a small onion but it'll do. Exact same boat here. Wife can't eat jalepenos. I grow some but i usually eat them raw diced into stuff. Groundhog legs with sweet preacher and a little spg. Smoked with cherry at 275 took them off at 175-180. Next time I'll try a little longer for more tenderness. Still really good

It Tastes horrible if they are not very small ones. Fatty like geese and chewy. The real little ones were better.I've never had groundhog.
Taste like squirrel?
The smaller ones taste like dark meat turkey if you soak them in salt water over night. My aunt used to bake older ones with fresh vegetables and beef broth and you could pass it as beef. If it's easily skinned like you would a rabbit they are good eating size. I got one that was 13 pounds and some change and it wasn't the most pleasant meat I've ever had.I've never had groundhog.

I have ordered from KREUZ MARKET LOCKHART, TEXASIt’s good. You can do better in the area. Burnt Bean in Seguin or Louie Mueller in Taylor. Brisket is soft and moist though.
