I'm assuming that we're generally talking about OC'ing here? Or are people saying that they'd respect the sign and not CC? If one was CC'ing properly, no one would even know, correct?

Right. My guess is that most of these signs (especially at establishments such as restaurants where patrons will be expected to remain on the premises for extended periods) are not a serious attempt to avert crime, but rather to eliminate discomfort among those who might not feel secure around...
I don't believe I'd feel guilt over such a situation. Or at least I'd feel less guilt than I would if I initiated something and THEN an innocent was killed. You can't see down the path not taken, so I'd not beat myself up over it. Anyway, I don't see myself as the protector of the masses.
That's funny, because I had that same feeling. Had I run across any LEO's on my jaunt I'd probably have dropped to the floor, went all spread eagle, and surrendered right there. They'd have though I was nuts, of course.

I'll tell you this much. I'm not playing Wyatt Earp in order to save the daily receipts at CVS. Unless I'm threatened or they start harming innocents I'm just a fly on the wall.

I'm a long way from OC. I'm not sure that'll ever be for me. I know we've got some Fort Wayne OC'ers who post here, but even though I'm watching for them pretty much every time I'm out I've still never actually seen one in the wild. Maybe it's my area of town. Or maybe I need to spend more time...

I have two high school age girls. They've both handled the unloaded pistols, and we're planning on teaching them to safely shoot thus summer...after the weather turns better and we've (my wife and I) have more time with the guns ourselves.

You know, that never occurred to me. I keep both my handguns in a gunvault next to the bed (we have kids) but I never considered that I could put the holstered gun in the safe rather than removing it.

Anyone shot both? Glocks are Glocks (safe and reliable choice), and Jack Bauer carried a Sig (who doesn't want to be cool like Jack) but is there any objective basis for choosing one over the other beyond personal preference?
